Zucchini Doughnuts (Gogosi cu Dovlecel)

My mom always used to make these zucchini doughnuts every summer. They  remind me of my childhood and our apartment in Brasov, Romania. This simple recipe brings out the sweetness of the zucchini, it’s a summer delight!

Zucchini Doughnuts

Ingredients (for about 20 doughnuts):

  • 2 medium zucchini – washed, grated and drained (no need to peel the zucchini)
  • 2 cups flour
  • 3 eggs
  • 3 TBSP sugar
  • 1 teaspoon baking powder
  • Oil for frying
  • Powder sugar


  • Heat oil over medium heat
  • In a bowl, mix all ingredients together – zucchini, flour, eggs, sugar and baking powder
  • Spoon the dough gently in the oil and fry about 1-2 minutes on each side
  • Drain on a paper tower and sprinkle powder sugar on top
