Strawberry Mousse (Spuma de Capsuni)

It’s almost strawberry season in Ohio so here is a Strawberry Mousse recipe that my mother used to make. Like the real chocolate mousse recipe it involves raw eggs. However, you can substitute that with whipped cream if you are afraid of serving the raw eggs.

Usually I make sure the eggs are fresh before using for his recipe. Also, I recommend serving this the same day you make it as the strawberries leave a lot of juice and can change the texture of the mousse.

Along with the simplicity and the delicious strawberry taste, another nice thing about this recipe is that it only needs 4 ingredients – egg whites, sugar, strawberries and lemon.

Strawberry Mousse

Ingredients for 4 portions:

  • 2 egg whites
  • 1 cup sugar
  • 1 teaspoon lemon juice
  • 4 cups washed and chopped well ripened strawberries

Preparation

Beat egg whites and sugar with an electric mixer until it holds stiff peaks. Add lemon juice and strawberries and keep beating for few more seconds until the strawberries are blended in. Refrigerate for a couple hours and serve.
