We used to eat this a lot in Romania. A great breakfast or dinner recipe for kids or even a great dessert.
Ingredients for 4 servings:
- 5 cups milk
- 1 cup rice
- 2 TBSP sugar (or if you prefer you can replace the sugar with honey and only add it once the rice is cooked)
- lemon zest from one lemon
Mix the milk and sugar and boil it over low heat. Once it starts boiling add the rice and keep stirring until the rice is cooked. Don’t go too far from the stove as the rice can easily stick to the bottom of the pot or the milk can boil over.
Once the rice is cooked you can add the lemon zest, keep on the stove for a couple more minutes and then remove from heat.
Divide the rice pudding in the serving bowls and sprinkle cinnamon on top.
