
Pumpkin Broccoli Soup
Delicious in every season this pumpkin broccoli soup is a must have for our Thanksgiving meal.
Ingredients
- 5-6 cups chopped pumpkin
- 3 chopped large carrots
- 1 onion
- 2-3 heads of broccoli
- 1 cup heavy cream
- 1 cup whole milk
- salt to taste
Directions:
Put everything in a pot, cover with water and bring to a boil. Simmer until vegetables are soft. Let it cool for few minute. Place everything in a blender and blend until pureed. Transfer puree back in the pot, add milk and heavy cream and bring to a boil.
Optional – Can garnish with parmesan cheese / pumpkin seeds / croutons and few drops of balsamic vinegar
