
Potato and Sausage Dish (Rakott Krumpli)
In Romania we used to make this dish without sausage (we used to call it French Potato Dish – Cartofi Frantuzesti) however, I got to taste the Hungarian version with sausage and I really liked it.
Feel free to try both and let us know which one you prefer. The version without sausage can be used as a side dish; you get a main dish once you add the sausage.
Ingredients:
- 2 lbs potatoes
- 8 hard boiled eggs
- 2 fresh eggs
- 7 oz sliced sausage
- Butter for the dish
- 1 1/2 cups sour cream
- 2 cups crumbled feta cheese
- Salt and pepper to taste
Preparation:
Boil the potatoes in their skin until tender. Drain the potatoes and let them cool, then peel and slice them. Butter an ovenproof dish and start arranging the dish – one layer sliced potatoes, one layer cheese, one layer sliced hard boiled eggs, one layer sour cream. Continue layering the ingredients and finish with a layer of potatoes.
Whisk 2 eggs with a tablespoon of sour cream and pour on top of the dish.
Bake the dish until the top is golden brown and crisp.
Serve with seasonal salad or, if you are not using sausage in the dish, you can serve as a side dish.
