Pea Soup

Spring is almost here. In the meantime, this soup will definitely brighten your day.

Ingredients (4 servings):

  • 3 TBSP olive oil
  • 1 medium chopped onion
  • 2 medium chopped carrots
  • 2 medium chopped potatoes
  • 1 pound fresh or frozen peas
  • 1/4 cups chopped fresh mint
  • 4 cups water
  • salt and pepper
  • Optional – parmesan and sour cream


  • Heat oil over medium heat, add chopped onion and carrots. Cook for about 5 minutes while stirring
  • Add Salt and Pepper to taste
  • Add water, potatoes, peas, mint and let everything boil for about 30 minutes until everything is cooked
  • Puree the soup by using a blender until everything is smooth
  • Serve with parmesan and sour cream
