
Pea Soup
Spring is almost here. In the meantime, this soup will definitely brighten your day.
Ingredients (4 servings):
- 3 TBSP olive oil
- 1 medium chopped onion
- 2 medium chopped carrots
- 2 medium chopped potatoes
- 1 pound fresh or frozen peas
- 1/4 cups chopped fresh mint
- 4 cups water
- salt and pepper
- Optional – parmesan and sour cream
Directions:
- Heat oil over medium heat, add chopped onion and carrots. Cook for about 5 minutes while stirring
- Add Salt and Pepper to taste
- Add water, potatoes, peas, mint and let everything boil for about 30 minutes until everything is cooked
- Puree the soup by using a blender until everything is smooth
- Serve with parmesan and sour cream
