Probably each family has a version for Mac and Cheese, here is ours … really simple and easy to make. If you have kids they this dish will definitely be one of their favorites.
Ingredients (2 servings):
- 9 ounces (about 250 grams) of pasta – boiled and drained
- 1 tablespoon butter
- 2 eggs
- 1/2 cups cream cheese
- 1 cup crumbled feta cheese
Boil and drain the pasta. Put the pot back on the stove and add the butter. Mix the eggs and the cheese and pour the mixture over the pasta. Keep stirring and cook until the cheese is melted.
The same recipe can be used for baked mac and cheese. Instead of cooking everything on the stove you can bake it (uncovered) until cheese is melted. When I do the baked version I add a whisked egg on top of everything, this will create a nice golden crust.
