Using the same dough we used for the Christmas Cookies we can also make jam cookie sandwiches.
Here is the recipe…
- 8 ounces margarine
- 2 cups powder sugar
- 1 egg
- 4 cups flour
- 3 tablespoons lard
- jam (apricot jam works great but you can use any other jam you prefer)
Mix all ingredients (except for the jam) until the dough comes together. Roll the dough and cut in different shapes (I used a round cookie cutter this time but you can use any shape you want). On half of the cookies cut out a smaller circle or square.
(if your dough is too dry you can add a couple TBSP of milk so it’s easier to work with)
Bake until edges are golden brown (about 10 minutes at 350 F).
Spread jam on the hole-less cookies and put together the cookie sandwiches. Sift powder sugar on top.
