Jam and Meringue Cake

I had this recipe for a few months now and I tried it few times with different jams. My family loves it and this is one of those desserts that you make and can enjoy for the rest of the week with a good cup of coffee. A delicious combination of cake, jam, meringue and walnuts.

Jam and Meringue

Ingredients for the cake layer:

  • 3 1/2 cups flour
  • 1 1/4 cups sugar
  • 6 egg yolks
  • 1 teaspoon lemon zest
  • 1 teaspoon baking powder
  • 1 cup kefir or buttered milk

Ingredients for the Meringue layer:

  • 6 egg whites
  • 1 1/4 cups sugar
  • 1 cup finely chopped walnuts

– the jam layer consists of 2 cups of any jam you have on hand ; I tried strawberry, apricot, raspberry, plum and blueberry and they all worked great


  • Preheat oven to 350 F
  • Using an electric mixer beat the egg yolks and sugar, add the flour, baking powder, lemon zest and buttermilk and mix until everything is well incorporated.
  • Using a rolling pin roll the dough on a parchment paper about the size of the baking pan you will be using (a 15 x 10 pan works great) and transfer it in the pan with the parchment paper
  • Spread the jam on top of the dough
  • For the Meringue layer – using an electric mixer beat the egg whites and sugar until they form stiff peaks. Fold in the chopped walnuts and spread on top of the jam.
  • Bake until you see the meringue starting to get a little golden.
