Chocolate Vanilla and Walnut Cake (Tort de ciocolata, vanilie si nuci)

I just made this Chocolate Vanilla and Walnut cake last weekend and my family loved it. The recipe looks long but it’s pretty easy to make.

Ingredients

– Batter:

  • 8 egg whites
  • 10 tablespoons sugar
  • 2 tablespoons oil
  • 5 tablespoons bread crumbs
  • 1 teaspoon baking powder
  • 3/4 cups chopped walnuts

– Frosting:

  • 8 egg yolks
  • 1 vanilla pudding pack (I prefer Dr. Oetker Vanilla Pudding )
  • 1 cup of sugar
  • 3 tablespoons corn starch
  • 3 cups milk
  • 1 tbsp vanilla extract
  • 1 1/2 cups chopped chocolate (room temperature)
  • 1 cup margarine (at room temperature)
  • 1 1/2 cups heavy whip

– More ingredients:

  • 12 lady fingers (to be used between the layers of frosting)
  • 1 cup cold milk to dip the lady fingers
  • 3 cups heavy whip (to cover the cake and decorate)
  • optional – fruit / sprinkles / cocoa powder to decorate the cake

Preparation:

  • Preheat oven at 350 degrees F
  • Butter two 9 Inch Round Cake Pans
  • Beat the egg whites and 10 tbsp sugar until stiff (I use the KitchenAid electric mixer)
  • Slowly add the oil while still mixing
  • Fold in the bread crumbs and baking powder
  • Divide the batter in the two 9 Inch Round Cake Pans and sprinkle the chopped walnuts on top
  • Bake for about 40 minutes or until golden brawn
  • Let it cool

 

  • For the frosting beat the egg yolks with the cup of sugar, add the vanilla pudding powder, corn starch, vanilla extract, milk and mix until everything is combined
  • Put everything in a pan and and place it on the stove on low heat (you need to keep stirring until it gets harder like a pudding)
  • Remove from heat and let it cool
  • Place the composition in the mixer and beat on medium speed, add the margarine and beat until everything is combined
  • Turn the speed on high and gradually add the 1 1/2 cups of heavy whip, beat for about 3 minutes until smooth and creamy
  • Place the chopped chocolate in a heat-proof bowl set over a pan with simmering water and stir until melted, then set aside. You can also use a Double Boiler to melt the chocolate
  • Place one layer of cake (walnuts up) on a flat plate or Cake Stand
  • Spread half of the vanilla frosting
  • Add a layer of lady fingers dipped in cold milk
  • Mix the rest of the frosting with the melted chocolate and spread over the lady fingers
  • Add the second layer of cake (walnuts down)
  • Put the cake on the fridge for few hour or over night
  • Once it’s cool, whip the heavy cream and cover the cake
  • You can decorate it with fruit or sprinkles
  • Serve cold
