
Chicken Schnitzel
An easy dinner idea and you can serve it with rice, potatoes, spinach, vegetables, over a salad or turn it into a sandwich. This is a great recipe and we probably make it once or twice a month in our household. Also, if you prefer pork or beef feel free to use that instead of chicken.
Ingredients (for 8 pieces of chicken schnitzel):
- 4 pieces of single boneless, skinless chicken breasts cut in half crosswise
- 3 eggs
- 1 cup flour
- 2 cups plain bread crumbs
- basil, salt and pepper to taste
- Oil for frying (you should have about 1/3″ oil in your skillet)
Directions:
- Place each piece of chicken between two pieces of plastic wrap and pound them. I like using the plastic foil so the meat juices don’t cover my kitchen, I find this the cleanest way to pound the meat
- Season the meat with basil, salt and pepper
- Set your dipping / coating station : beat the eggs in a wide shallow bowl, add another bowl/plate with flour and one more with the bread crumbs (sometimes I do add some dry herbs in the bread crumbs like basil or parsley for more flavor)
- Heat the oil in a skillet over low heat
- Start coating the meat: flour – eggs – bread crumbs
- Cook the schnitzel on both sides until golden brown
- Transfer the schnitzel on a plate lined with paper towel for few minutes before serving so it drains some of the frying oil
