Cheesy Potato Casserole

A variation of the Potato and Sausage Dish, this Cheesy Potato Casserole became a favorite side dish in our house.

Cheesy Potato


  • 6 large boiled, peeled and sliced potatoes
  • 5 hard boiled, peeled and sliced eggs
  • 3 cups shredded cheese (any combination should work)
  • 4 TBSP sour cream
  • 1 cup heavy cream
  • 2 fresh eggs
  • Pepper
  • 1 TBSP butter (room temperature)
  • Optional – 1 cup crumbled bacon (preferable home made) and chopped basil to garnish


  • Preheat oven at 400 F
  • Butter a round 10 inch baking dish (should be a deep dish as we will layer all the ingredients)
  • Start layering the ingredients: one layer potatoes followed by sour cream, cheese, eggs, another layer of potatoes, sour cream, cheese, eggs, pepper, if you are using bacon and basil you can add those into the layering also; Finish with a layer of potatoes, covered with cheese
  • Beat the two fresh eggs and spread on top. Add more pepper if desired, pour the heavy cream and bake until golden brown (about 30-45 minutes)
