This is a great appetizer, common in the Bulgarian and Romanian cuisine (however it’s also a staple dish for the Mediterranean cuisine).
- 1/2 cup fish eggs (or roe)
- juice from one lemon
- 2 slices of white bread soaked in water or milk (only use the core of the slice)
- 1 1/2 cups of oil
- 1 small minced onion
The preparation is similar to making mayonnaise – you use a mixer and beat the fish eggs and the soaked bread; slowly start adding the oil. Keep beating until all the oil is incorporated, add lemon juice and keep beating until everything is incorporated and it has the consistency and look of mayonnaise.
Chill and serve with bread or toast. This is a great dish for parties.
