    Bulgarian Potato Salad

    Most of the Eastern European potato salads don’t include mayonnaise, instead we use a dressing made with oil and vinegar. I will present few different potato salads; I thought I would start with the Bulgarian recipe since this is pretty basic. By adding different ingredients to this you will be get different recipes, specific to other countries – soon to be posted are the Serbian Potato Salad and the Romanian Potato Salad. Each of these dishes can be served by themselves or as a side dish. They are simply delicious. Enjoy!     Cabbage Salad (Salata de Varza)

    In Romania we usually eat the salad together with the main dish. Because of this most salads are not that elaborated, instead they are made to complement the food. The red cabbage salad goes really well with a meat dish. Here are the ingredients: Shredded Cabbage (in this case I used a combination of red and white cabbage) Dill Oil, Vinegar, Salt, Pepper It’s really easy to make and it’s delicious.

    With all the dressings existent on the market I still prefer a simple oil and vinegar/lemon juice dressing. Maybe I’m not used to it since we didn’t have any dressings while I was growing up, but I feel that the dressing takes away from the flavor of the vegetables.
