Refried Beans

Don’t worry this recipe does not involve any frying, this is how my mother taught me to cook refried beans and it’s the recipe she has been using for years with our family, there might be other recipes out there that actually involve frying but not this one. I tried to name this dish differently however, to resonate with the readers, we will stay with refried beans name. This is a staple dish of the Romanian cuisine ‘Fasole Batuta’ and especially served during lent, there are probably hundreds of recipes of this dish and each house has its own, needless to say that I find this the most delicious so give it a try.

It can be served as a meal, a dip or side dish; works great with sausage and some pickles.

Homemade Tomato Soup

Can’t believe the summer is almost over and the morning low temperatures are definitely make everything feel like fall. Since our garden tomatoes are taking over all our meals (we eat everything tomato these days – tomato salad, pasta and tomato sauce, tomato juice,  tomato and mozzarella, tomato everything) I decided to not let anything go to waste and made my sons favorite soup – tomato soup. I froze half of it in small containers so the kids can have this in a few days or weeks or whenever they crave it; plus it will also save me making a meal for them.

Chicken Paprikas with Dumplings- Romanian recipe (Paprikas de Pui)

Chicken Paprikas is a great dinner idea and it’s pretty easy to make. This is definitely one of my kids favorite dish! Usually I make a double quantity of dumplings as they want extras.

I have this recipe from my mom but it’s a Hungarian inspired recipe and there are different variations so you can definitely make this your own and if you feel something else is needed, maybe you have a favorite vegetable you want to add or change the meat type go ahead. What makes paprikas a paprikas is the tomato sauce, paprika and the dumplings – those are an insanely delicious combination so keep those in your recipe.
