Apple Cake (Tort de Mere)

Here is a great cake recipe. It might seem complicated but it’s really easy to make. My husband used to make this before we got married; I don’t see him in the kitchen too often now but he still loves to eat this apple cake.

You should try it as it tastes really different from the traditional Apple Pie.

Ingredients:

  • 7 peeled and cored apples
  • 1 tbsp butter
  • 1/2 cup sugar
  • 1 spoon cinnamon
  • 7  spoons of jam or jelly ( I like to use either strawberry or plum jam)
  • 1/2 cups chopped walnuts (optional)

Batter:

  • 7 eggs
  • 7 TBSP sugar
  • 7 TBSP sifted flour

Preparation

  • Preheat oven to 350 degrees
  • Use the butter  to grease a 10 inch round baking pan, sprinkle 1/2 cups sugar
  • Place the cored apples in the pan and put a tablespoon of jam inside each of them (if you are also using walnuts you can to mix the walnuts with the jam)
  • Bake everything until the apples soften and the sugar melts

In the meantime you prepare the batter as follows:

  • Separate the eggs and using an electric mixer beat the egg whites and sugar until stiff
  • Add the egg yolks and beat for 10 more seconds
  • Use a whisk to incorporate the sifted flour in the batter (do not use the mixer anymore)
  • Pour the batter over the baked apples and bake for about 1h or until tester comes out clean (I usually use a toothpick to test)
  • Once it’s baked you turn it upside down on a plate and let it cool (make sure you pick a larger plate so the juice from the melted sugar and apples will not spill). When it cools you turn it again so the apples are on the bottom
  • Boil 1 cup of water with 2 TBSP sugar for 3 minutes and brush it on top of the cake. Refrigerate for a couple hours before serving
  • Optional – cover with whipped cream
