Apple Bars

Another great dessert for the season. Really easy to make and the kids enjoyed having this snack at school.

Apple Bars

 

Ingredients (for a 10×15 inch baking pan):

Pastry:

  • 2 eggs
  • 1/2 cups sugar
  • 1/4 cups milk
  • 1/4 cups oil
  • 1 TSP baking powder
  • 3 cups flour
  • 2 TBSP plain bread crumbs
  • another 1/2 cups flour needed to work the dough

Filling:

  • 10-12 apples peeled and coarsely gratedĀ (peeling is optional but it definitely makes the grating process easier); also, i use a variety of apples
  • 1 TSP cinnamon
  • 2 TBSP sugarĀ (optional, depending how sweet the apples are)

Directions

  • Cook the grated apples over medium heat for about 10 minutes, add sugar and cinnamon and cook for 5 more minutes, remove from heat and let it cool
  • Preheat oven at 375 degrees F
  • With an electric mixer beat the eggs and sugar
  • Add the milk
  • Add oil, a TBSP at a time while still beating
  • Add flour and baking powder and blend until well combined
  • the Dough will be sticky but can be worked with flour; divide the dough in 2 and roll to a 15×10-inch rectangle on a well-floured surface
  • Grease the pan and sprinkle flour on top
  • Place the 1st dough in the greased pan, sprinkle half of the bread crumbs, add the cooked apples and sprinkle the remaining bread crumbs on top, place the 2nd dough on top of the apples
  • Poke holes with a fork in the top crust to allow steam to escape
  • Bake for about 30 minutes or until golden brown
  • Remove from oven, let it cool for 10 minutes, cut in squares and sprinkle powder sugar on top
