
Apple and Pear Cake
I think this recipe would work very good even with plums or apricots. I tried it with apples and pears and it was delicious. if you serve it warm you can try to add a scoop of vanilla ice-cream on top.
Ingredients:
- 2 eggs
- 1/2 cups milkĀ ( i used almond milk, but regular milk or coconut milk should also work well)
- 1/2 cups oil
- 2 cups flour
- 1 cup sugar
- 1 teaspoon baking powder
- lemon zest from one lemon
- 2 teaspoon vanilla extract
- 3 pears & 3 apples or any other combination of the two – peeled, cut in half and sliced
- 1 teaspoon cinnamon
Preparation:
- Beat the eggs and add all the other wet ingredients (milk, oil, vanilla extract), mix everything together
- Mix the dry ingredients (except for the cinnamon) and with a spoon fold them into the wet ingredients
- Cover a 9″ or 10″ round cake pan with baking paper and pour the batter into the pan
- Add the sliced apples and pears on top and sprinkle the cinnamon
- Bake at 350 for about 45 minutes or until golden brown
